Our family is going to a witchy Halloween potluck party this weekend to have some fun and do our part to cast some magical spells on humanity with other awesome witches. We’ll be wearing our wicked black hats, but we’ll be casting white spells of goodness, peace, prosperity, healing and love to all… if you can handle it!
For the potluck part of the witch party, I was inspired to create a vegan whole food frosting for my spooktactular brownies! Eye wanted it to have lots of newt-rients that serve a purpose beyond just being decadent and delicious for the taste buds. I wanted it to be extremely simple to make with ingredients I already had in stock, I wanted my girly Coco-Momo to love it… and other kids of all ages (including myself and my hubby), and I wanted it to be orange for the occasion… of course!
Hmmmmm, being in and around the raw and vegan food movement for about a decade now, I had heard that you can make a damn good frosting out of tahini, but I had never done it (why?) … ding ding ding, lightbulbs going off! After playing with a few different combinations, I whipped up this crazy delicious 3 ingredient frosting that you absolutely HAVE to try or you’re just plain missing out on an opportunity for a bliss moment. The ingredients are tahini, maple syrup and goji berries, and here are the benefits:
Tahini: One of THE best sources of calcium out there! Also loaded with minerals like potassium, magnesium iron and phosphorus. It’s also high in B vitamins.
Goji Berries: Incredibly high in antioxidants, vitamin C and are an anti-inflammatory. Goji’s are known to boost the immune system and promote healthy hair, skin and nails, stabilize blood sugar, detoxify the liver, and protect against cancer… just to name a few things.
Maple Syrup: A good alternative to cane sugar and great if used in moderation, like all sweeteners. Maple is loaded with many of the same beneficial minerals as tahini, and also contains antioxidants, which are inflammation reducing. Medical Medium says that “maple syrup remineralized the blood and brain.”
Soooo here’s the recipe:
1 Cup of Creamy Tahini
1/4 cup Maple (or more if you like it sweeter)
1/4 cup Goji Berries
Blend up in a high speed blender like a vitamix and OMG you will be in heaven! Spread it on your favorite brownies, cakes, cupcakes or whatever, even straight up out of the blender!! I haven’t tried this yet, but you can also make this with raw cacao powder instead of goji berries for a creamy chocolate frosting! Enjoy and HApPY HaLlOwEeN 🎃
