Parsley is SO much more than a garnish. It has POWERFUL healing properties that help purify blood, kill bacteria, boost immune system, improve digestion, detox the liver and soooo much more. I have been CRAVING it lately, so I came up with this recipe that is gluten free and totally raw:
Ingredients:
2 cups of curly parsley (1-2 bunches depending on size)
1/2 white or yellow onion
1/2 cup small cherry tomatoes sliced in half or quarters
1/2 cup sprouted quinoa
1/4 cup hulled hemp seeds
1/2 avocado
1 Lemon
3 Cloves Garlic
1/4 cup cold-pressed organic olive oil
1/2 tsp pink Himalayan salt
How to Prepare:
1) Soak quinoa for 3 hours. Rinse and drain. Place seeds in a jar or a sprouter out of indirect sunlight. Rinse and drain again 2 to 3 times a day until tails are 1/4 inch. Place in refrigerator to prevent further sprouting.
2) Chop parsley until REALLY fine and place in large bowl. Mix in diced tomatoes, onions, quinoa and hemp seeds. *You can use only sprouted quinoa or only hulled hemp seeds if you want
3) Add olive oil, lemon, pressed or finely chopped garlic and pink salt
4) Dice a ripe organic avocado on top and ENJOY
